Butterbean Casserole - Baked Lima Beans

4 cans 'Joan of Arc' or equivalent Butter Beans
1 large onion, chopped
1 cup of chopped celery
1 clove garlic
1 large green pepper, chopped
1/4 cup vegetable oil
1 8 oz can tomato sauce
1 tsp paprika
1/2 tsp dried mint

Cook onions, garlic and celery in oil until soft, add cut up pepper, tomato sauce, paprika and mint, and simmer for 10 minutes. Combine beans and sauce mixture in a 9x13 baking dish or pan, and bake at 350 until sauce thickens -about 45 minutes.
